How Long to Brew Green Tea (Sencha & Hojicha)

Green Tea (Sencha) Leaves


For hot tea:


Brew sencha leaves in hot 165-185°F (75-85°C) water for 30 seconds or until the leaves are loosened.


Sencha tea leaves are more raw. So it's best that they're brewed in less hot water (to keep the umami fresh).


For high-quality ten or gyokuro teas, brew 3.5g of tea leaves in 1oz lukewarm 110-140°F (43-60°C) water for 2.5 minutes.


For cold tea:


Place 5g sencha leaves in an infuser and let sit in 16oz room-temperature water. Place in fridge for 20 minutes.

Hojicha Leaves


For hot tea:


Brew 3g hojicha leaves in 5oz boiling hot 212°F (100°C) water for 30 seconds or until the leaves are loosened.


Hojicha leaves are roasted, so it can tolerate a higher temperature and more time to extract the flavor.


For cold tea:


Place 5g hojicha leaves in an infuser and let sit in 16oz room-temperature (75°F/24°C) water. Place in fridge for 20-25 minutes.
